Jalapeno + Lime Coleslaw

WHAT YOU NEED

  • 1/2 head red cabbage
  • 1/2 head green cabbage
  • I medium radicchio 
  • 1 cup shredded carrots 
  • 4 green onions, sliced 
  • 1 jalapeno, sliced
  • 1/2 cup fresh cilantro, chopped

DRESSING

  • 5 limes, juiced
  • 1 tsp. cumin
  • 1 tbs agave nectar
  • 1/4 cup olive oil
  • 1/2 tsp pepper
  • 1 tsp kosher salt

WHAT TO DO

  1. Slice cabbage + radicchio thinly, using a mandolin and it will give you about 2 cups each. 
  2. Add jalapeño, carrots and green onion. 
  3. In a medium bowl, mix ingredients for dressing. 
  4. Pour dressing over cabbage mixture and toss well. Serve.
