Ingredients
- Couscous:
- One sweet potato diced
- Half of a yellow onion diced
- 1 tbs olive oil
- One box near East garlic and olive oil pearl couscous- Cook two package directions
- Half a cup of chopped pecans
- Half a cup dried Cranberries
- Half a cup goat cheese crumbles
- Dressing -
- 1/3 Cup Apple cider vinegar
- 1 TB Maple syrup
- 2 TB Dijon mustard
- 1/3 Cup Olive oil
- dash of garlic powder
- Dash of onion powder
- 1/4 teaspoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Sauté sweet potato onion olive oil until tender. Set aside
- Cook couscous to box directions. Set aside
- Make dressing
- Mix sweet potato and onion mixture with cooked couscous. Add dressing to liking.
- Sprinkle with crumbled goat cheese.
- place in fridge you could totally eat it warm or at room temperature but we had a cold.
