Autumn Couscous


  • Couscous:
  • One sweet potato diced
  • Half of a yellow onion diced
  • 1 tbs olive oil
  • One box near East garlic and olive oil pearl couscous- Cook two package directions
  • Half a cup of chopped pecans
  • Half a cup dried Cranberries
  • Half a cup goat cheese crumbles
  • Dressing -
  • 1/3 Cup Apple cider vinegar
  • 1 TB Maple syrup
  • 2 TB Dijon mustard
  • 1/3 Cup Olive oil
  • dash of garlic powder
  • Dash of onion powder
  • 1/4 teaspoon fresh thyme leaves
  • Salt and pepper to taste


  1. Sauté sweet potato onion olive oil until tender. Set aside
  2. Cook couscous to box directions. Set aside
  3. Make dressing
  4. Mix sweet potato and onion mixture with cooked couscous. Add dressing to liking.
  5. Sprinkle with crumbled goat cheese.
  6. place in fridge you could totally eat it warm or at room temperature but we had a cold.
