Ingredients
- 8 LARGE EGGS
- 4 - 5 EVERYTHING or SESAME BAGELS
- 6 SLICES OF BACON
- 2 GREEN ONIONS
- 1 1/2 CUP MILK
- 1 1/2 CUPS OF CHEDDAR CHEESE
- SALT + PEPPER
- OPTIONAL
- SAUTED VEGTABLES
- SAUTED SPINACH + TOMATOES
Instructions
- Preheat oven to 350 degrees and cute your bagels into 1 inch pieces
- Fry your 8 slices of bacon and set to the side
- Grease a 9”-x-13” baking pan
- Scatter half the bagel pieces in pan, then top with half the cheese + fried bacon (option to add sautéed veggies + spinach + tomatoes here also)
- Repeat Layer
- In a large mixing bowl mix eggs, milk, green onions, salt + pepper .Whisk until mixed together
- Pour mixture over the casserole, then cover with foil and bake for 45 minutes
- Remove foil and bake until the bagels are browned and the eggs are cooked through, about 20-25 more minutes

You could totally freeze this! Make sure to wrap it up well.
Can you make this a day or two ahead and put in the fridge before you bake it?
Maybe a day, more than that may break down the bread too much.
Have you ever tried with a sweet bagel instead- like a blueberry or cranberry?
I haven’t BUT you could totally put a sweet twist on this.
