CORNBREAD ELOTE

Ingredients

  • 1 TB OF BACON DRIPPINGS
  • 2 CUPS OF CORNMEAL OR 1.5 CUPS OF CORNMEAL + 1/2 CUP OF FLOUR
  • 1 TSP OF BAKING SODA
  • 1 TSP OF SALT
  • 1 TB SPOON OF SUGAR
  • 1 LARGE EGG
  • 1 1/4 CUP OF BUTTERMILK
  • 6 TB OF UNSALTED BUTTER
  • ELOTE TOPPING
  • 2 STALKS OF ROASTED CORN (OR 1 CUP)
  • 1/2 CUP OF MAYONNAISE
  • 1/4 CUP OF MEXICAN CREMA
  • 1/2 CUP OF COTIJA CHEESE
  • 1 BAG OF TAKIS CHIPS
  • 1 LIME

Instructions

  1. CORNBREAD
  2. PREHEAT OVEN TO 400 AND GRAB YOUR CAST IRON SKILLET
  3. IN A LARGE BOWL COMBINE ALL INGREDIENTS + MIX WELL
  4. POUR MIXTURE INTO CAST IRON SKILLET
  5. BAKE IN OVER 20 - 25 MINUTES
  6. ELOTE TOPPING
  7. COMBINE CORN, MAYO, CREMA + CHEESE IN BOWL, JUICE OF LIME -MIX WELL
  8. SPREAD MIXTURE OVER COOKED CORNBREAD
  9. IN A ZIPLOC BAG, TAKE TWO CUPS OF TAKIS AND SMASH WITH A ROLLING PIN UNTIL LIGHTLY DUSTED
  10. TOP ELOTE MIXUTE WITH DUSTED TAKIS
