- 1 TSP OF SALT
- 1 TB SPOON OF SUGAR
- 1 LARGE EGG
- 1 1/4 CUP OF BUTTERMILK
- 6 TB OF UNSALTED BUTTER
- ELOTE TOPPING
- 2 STALKS OF ROASTED CORN (OR 1 CUP)
- 1/2 CUP OF MAYONNAISE
- 1/4 CUP OF MEXICAN CREMA
- 1/2 CUP OF COTIJA CHEESE
- 1 BAG OF TAKIS CHIPS
- 1 LIME
Instructions
- CORNBREAD
- PREHEAT OVEN TO 400 AND GRAB YOUR CAST IRON SKILLET
- IN A LARGE BOWL COMBINE ALL INGREDIENTS + MIX WELL
- POUR MIXTURE INTO CAST IRON SKILLET
- BAKE IN OVER 20 - 25 MINUTES
- ELOTE TOPPING
- COMBINE CORN, MAYO, CREMA + CHEESE IN BOWL, JUICE OF LIME -MIX WELL
- SPREAD MIXTURE OVER COOKED CORNBREAD
- IN A ZIPLOC BAG, TAKE TWO CUPS OF TAKIS AND SMASH WITH A ROLLING PIN UNTIL LIGHTLY DUSTED
- TOP ELOTE MIXUTE WITH DUSTED TAKIS
