Ingredients
- BURGER
- Makes 8 - 4oz patties
- 1lb. Hanger steak (cubed)
- 1 lb. ny strip (cubed)
- Kosher salt
- Ground black pepper
- SAUCE
- 1 cup mayo
- 2 1/2 Tbl ketchup
- 1 1/2 Tbl hot honey
- 1 Tbl hot sauce
- 2 tsp cajun seasoning
- 1 1/2 tsp Worcestershire sauce
- Mix all ingredients and place in fridge until ready to use.
Instructions
- Using a food processor or food grinder, grind the cubed meat into a coarse grind.
- Using your hands, form 4oz balls and place on a tray.
- Heat griddle top to medium high and place meat on griddle spaced out about 6” apart.
- Using wide, rigid spatula, smash burger down flat (roughly 1/4” thick) and sprinkle a pinch of salt and pepper on top of each patty. Cook for 2-3 minutes, or until the edges start to brown and crisp.
- Flip the burgers over and repeat with the salt and pepper.
- Cook an additional 2 minutes or until burger is thoroughly.
- Remove and place on bun.
