PUMPKIN BRAISED SHORT RIB + MAPLE SWEET POTATOES

Ingredients

  • SHORT RIBS:
  • 2.5 lbs or 5 beef short ribs
  • 3 large celery stalks chopped
  • 1 large carrot cut into 1/2 inch sticks
  • 1 shallot finely chopped
  • 3-4 cloves garlic finely chopped
  • 1 large yellow onion cut into slices
  • 1 12oz bottle of preferred pumpkin beer
  • 1 16 oz of beef or vegetable broth
  • 1 15 oz can of pumpkin puree
  • Spiceology Prime Rib rub
  • Salt and pepper to taste
  • SWEET POTATOES:

Instructions

  1. Lightly rub down ribs with olive oil.
  2. Sprinkle to cover each rib with Spiceology Prime Rib Rub.
  3. Refrigerate, uncovered on a baking sheet for at least an hour prior to cooking.
  4. Heat 6 to 8 qt. dutch oven over medium high heat.
  5. Add 1-2 tbsp, of olive or avocado oil.
  6. Using tongs, place the ribs into the dutch oven allowing each side to brown for 2-3 minutes before removing from heat and setting aside.
  7. Place onion, celery and carrot into dutch oven and cook while occasionally stirring until onion becomes translucent, about 5-7 minutes.
  8. Add shallot and garlic and continue to cook for 2-3 minutes until aromatic.
  9. Add pumpkin beer, broth and pumpkin puree to vegetables and drop heat down to a simmer.
  10. Stirring occasionally, allow the alcohol to burn off of the sauce and cook about 15 minutes and let it reduce some and to thicken.
  11. At this point, season with salt and pepper to preferred taste.
  12. Add the meat back into the sauce and and make sure you have enough liquid to cover at least halfway up the ribs.
  13. Cover the dutch oven with the lid and place in a preheated oven set at 350 degrees oven.
  14. Allow to cook for an hour.

This sounds Absolutely delicious but am I missing the sweet potato portion of the recipe? I know we can just chop and roast them with evoo and s+p or bake it but I wasn’t sure if you had a particular method you like with the short ribs? Thanks!! cant wait to try this!

Would love to make these in the crock pot…I have the one you recommended that you can sear in. How long would it take in the crock pot?
