Ingredients
- 1 LB of Bacon
- 2 Pork Tenderloins
- 4 Cloves of chopped garlic
- 1/2 Tablespoon of olive oil
- 6 Ounces of Ricotta cheese
- 3-4 Fresh basil leaves chopped
Instructions
- Preheat oven to 350
- Take the bacon and quilt it together, place on pan covered in Saran Wrap
- Take the pork tenderloins, split them open (careful not to cute all the way through) and pound them to lay flat- lay them right next to each
- Mix chopped fresh garlic, ricotta cheese, chopped basil leaves, olive oil, salt + pepper in a bowl
- Spread mixture on the inside of the tenderloin
- Roll up tenderloin (like a jelly roll)
- Cover it with bacon quilt
- Cook for about 20 - 25 minutes
- * it may also be placed indirect on the grill at 350 degrees for 1 hour or until internal temp reaches 145 degrees.
I have made this twice now!! So delish !! qq- the first time I made it I made one big, fat roll and it took over an hour and a half to cook all the way through. Second time rolled each tenderloin by itself. That only took 45 mins to cook both. I’m curious what type If oven you have that cooks the whole thing in one roll for 25 mins ?? Let me know!! This was SOOOOO yummy and I looked like a superstar cook! It did take 60 minutes to come to 145 but fine by me! Thank you for making it fun and yet still easy.
