Ingredients
- 3 Cups Romaine Lettuce
- 2 Cups of Arugula
- 1 Bunch of Asparagus
- 1 Cup of Fresh Corn
- 1 Apple
- 1 Bunch of Fresh Mint
- DRESS INGREDIENTS
- 2 TB Apple Cider Vinegar
- 1/4 Cup of Fresh Orange Juice (1/2 an orange)
- Orange Zest
- 1/2 Cup of Olive Oil
- 1 TB of Honey
- 2 TSP of Dijon Mustard
- Salt + Pepper for taste
Instructions
- Wash and chop your romaine lettuce, put into serving bowl of your choosing
- Prep your asparagus, bring a pot water to boil
- Add your asparagus and let cook for 2-3 minutes
- Remove asparagus from pot and add to a bowl of ice water, let sit for 15 - 30 seconds
- Remove asparagus from ice water, pat down with a paper towel and then cut into one inch pieces
- Add in your asparagus, arugula and fresh corn to the romaine
- Cut your apple into match sticks and add to the salad
- Add all of your dressing ingredients into a food processor - mix and enjoy!
