Ingredients
- 2 lb salmon filet
- 4 limes
- 1 stick of butter
- 6 garlic cloves, minced
- fresh cilantro, chopped
- salt + pepper
Instructions
- Preheat oven to 400 degrees.
- Melt butter in a microwave safe dish or on the stove top and set aside.
- Using foil, cover a shallow baking sheet, carefully crimping the edges to create one inch sides all the way around.
- Add the juice of two limes, minced garlic and stir.
- Pour melted butter mixture in foil pan.
- Slice the remaining two limes and lay the slices on top of butter, creating a single layer across the bottom of pan.
- Place salmon on top of limes and season with salt + pepper.
- Bake for 20-25 minutes or until salmon reaches desired temp and doneness.
So the butter mixture goes on the pan and not in top of the salmon?
Yes ma’am. But also spoon it over after cooking 🙂
I made this tonight and it’s amazing. My whole family ate it (which is rare). My husband said it was better than a restaurant. Thanks so much for a great recipe. It will be in weekly rotation at my house.
THIS MADE MY DAY!!!! Thanks for letting me know. Xx
What do you do with the cilantro?
sprinkle on at the end.
Can the cilantro also be cooked or is that for afterwards?
It can be cooked but I save some to sprinkle after it comes off. Like a garnish
Landyn, do yo cook the salmon covered or uncovered? skin on or skin off? Can’t wait to try this recipe! Mouth watering!
If you can, take skin off. Letting the juice soak up the bottom
Bake Covered or uncovered?
Uncovered! Xx
Have you ever tried this recipe without butter or using a butter substitute? If so, what works best? Sounds delicious!
I haven’t BUT you could definitely use GHEE there shouldn’t be much difference!
I’m trying it with Ghee tonight
Made this for dinner tonight and it was delicious! The salmon was perfect! Thank you for sharing!
Amazing! X
Just that it’s delicious! 💛🍋🌱
Do you leave the skin on ur salmon ?
Yes! The salmon comes right off the skin after it bakes.
What do you typically serve along side this? Always trying to think of the best sides that compliment : )
Try some rice and a veggie!
What sort of side dish do you usually serve with this?
A little salad, rice or asparagus with lemon is yummy!
Made this last night and it was a hit. We eat salmon 2-3 times a week and this was a (welcomed) fresh spin, the lime and cilantro are perfect together.
Love to hear this! x
