LIME + CILANTRO SALMON

Ingredients

  • 2 lb salmon filet
  • 4 limes
  • 1 stick of butter
  • 6 garlic cloves, minced
  • fresh cilantro, chopped
  • salt + pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Melt butter in a microwave safe dish or on the stove top and set aside.
  3. Using foil, cover a shallow baking sheet, carefully crimping the edges to create one inch sides all the way around.
  4. Add the juice of two limes, minced garlic and stir.
  5. Pour melted butter mixture in foil pan.
  6. Slice the remaining two limes and lay the slices on top of butter, creating a single layer across the bottom of pan.
  7. Place salmon on top of limes and season with salt + pepper.
  8. Bake for 20-25 minutes or until salmon reaches desired temp and doneness.

So the butter mixture goes on the pan and not in top of the salmon?

I made this tonight and it’s amazing. My whole family ate it (which is rare). My husband said it was better than a restaurant. Thanks so much for a great recipe. It will be in weekly rotation at my house.

I haven’t BUT you could definitely use GHEE there shouldn’t be much difference!

Yes! The salmon comes right off the skin after it bakes.

Made this last night and it was a hit. We eat salmon 2-3 times a week and this was a (welcomed) fresh spin, the lime and cilantro are perfect together.
