This salad goes waaaaaay back. I can’t really tell you how long I’ve been eating it or how exactly the ingredients came to be. It was probably one of those days where it was what I had in the fridge, but it was so damn good it stuck. I used to call it my beach body salad, ya know…working towards always trying to keep things tight and right. I always feel great afterwords, satisfied and healthy. I love the crunch of the almonds, sweetness from the blueberries and the tanginess from the lemon. So, I thought I’d share one of my go-to’s. And feel free to add some of your favorites to it too.
- kale spring mix
- 4oz grilled chicken or salmon - optional
- cherry tomatoes
- english cucumbers
- marcona almonds
- cracked pepper
- olive oil
- fresh lemon juice
- Add your lettuce mix to bowl
- Chop up all these yummy fruits + veggies
- Sprinkle with cracked pepper
- drizzle with olive oil
- squeeze fresh lemon juice over top
This looks yummy. Curious… what olive oil do you like to use on salads? I feel like some oils are so bitter or have such a strong flavor. PS – have fun unpacking!
I honestly just use whatever I have in my kitchen at the time!
